These started out as cookies, but the modifications just didn’t cut it for cookies. Instead I made some awesome Gingerbread muffins to have after my 6 miler this morning.
1 container 12oz of the softest tofu you can find
1 extra large egg
1 tbsp stevia
1/4 cup sugar
3/4 cup whey protein
3/4 cup soy protein
4 tsp dark molasses
2 tsp cinnamon
2 tsp ginger
Sprinkle nutmeg
1tsp cloves
1 1/4 cup wheat flour
1/2 cup sugar in the raw
Whip tofu, stevia, egg, and sugar
Add molasses.
Stir previously mixed dry ingredients.
Bake at 350 degrees for 12-20 min
Yield 16 muffins
